As for the second Rolled Sushi, you need raw(sashimi) salmon instead of canned tuna.
You can also make Vegetarian Rolled Sushi with just vegetables.

You can mix and match the toppings according to the season. Leaf-shaped carrot and baked egg is great topping for the fall. Flower shaped ham is a perfect match for the spring .
