Japanese dashi mild vegetable curry

This  is a very mild wafu dashi curry  and can be eaten by children to adults. And also you can intake a lot of  vegetables. It is more like a sauce that goes with Japanese steamed rice. Surprisingly, it isn't well known although curry is one of the national dishes in Japan. First, I make dashi soup stock which is made from Konbu and katsuobushi called Wafu dashi. This soup stock (dashi soup) is very convenient. You can use it for miso soup,  and etc. You can use it to make curry and also make any kinds of curry like meat, seafood or what ever you like. You can also adjust the hot flavors too. I hope you have fun cooking with me this dish.

Daily Low-Carb Cooking (Okonomi-Yaki)

As a quick low-carb meal, I would like to share the recipe of Okonomi-Yaki, which is a Japanese non-sweet cabbage-based pancake cooked on a frying pan. In my recipe we use  a very small amount of flour.  You can add your favorite filling, such as sliced pork, shrimp and cheese -- actually “Okonomi” means “Your Favorite”. Let’s also make Caprese (mozzarella cheese and tomato) as a side dish, which is fresh and cold!

If you apply for my class, I will send you the basic recipe in English and a list of ideas for topping (ingredients) so that you can prepare your own “Okonomi” ingredients! During the workshop, I will show you how we cut the materials, make Okonomi-yaki batter, and cook with a flying pan while chatting.  If you have two frying pans, we can cook for two persons at the same time.  Let’s have fun together!

Note:
Currently I am doing the workshop mainly by online due to COVID-19.

I could do some workshop on request basis, but I need  to have 3+ customers (4,800 yen per person).

If you love BBQ and are looking for an easy but delicious dish to impress your family and friends, this will be the perfect lesson for you! !  You get to learn this dynamic, instagrammable and scrumptious CHAN-CHAN YAKI (Fisherman-Style Salmon BBQ) from the Gourmet Land, Hokkaido.

It's a regional BBQ dish with a huge fillet of salmon grilled along with various local vegetables and MISO-BUTTER sauce. It's so delicious and such a representation of Hokkaido's food culture. To make it even richer and gorgeous, I came up with an idea of adding a pot of melted cheese to give it the element of Cheese Fondue (Hokkaido is the biggest dairy producer of Japan). This is my original recipe, and you will never find the same one anywhere else!

Lets make Vegan Ramen and Gyouza at local home. In Japan, vegetarian or Vegan food is quite tough due to Dashi, soup stock made by mainly bonito flake (it's made out of fish stock).

Ramen is a noodle dish with a delicious soup and several toppings. Gyoza is a dumpling made with minced stuffing. They are becoming increasingly popular cross the world.

Traditional Japanese Cuisine with a chef

I’ll teach you how to make washoku—traditional Japanese cuisine—and together we'll cook four delicious, easy-to-make dishes. First, we’ll prepare dashi, a simple seaweed-based stock that is the cornerstone of our country's cooking. Using seasonal ingredients and dashi stock, we’ll make a home-style entrée, side, soup, and dessert.

I’ll explain the ingredients, share cooking tips, and provide step-by-step instruction on how to make everything with local cooking tools. Each dish only takes about 20 minutes to create. There are plenty of complicated and time-consuming Japanese recipes, but I want you to learn ones that you'll use back home. When we’re finished, we’ll eat the food we prepared together.
