Do you know Anpan?  Anpan born in Japan in 1874 is a type of bread  filled with red bean paste.  It is  still very popular.   If  you don't like or can't get  red bean paste, don't worry.  I will introduce sweet potato paste as an alternative. Do you think handmade bread is difficult?   It must be easier than you expect.   Fresh handmade bread is so delicious and we can use the microwave to reduce fermentation time. Seasonal Chirashi (scattered) Sushi

There are a wide  variety types of Chirashi Sushi .  Chirashi Sushi is mixed sushi with different kinds of garnishes on the top of vinegared rice. You can use any of your  favorite ingredients  such as  egg  strips (kinshi-tamago),  colorful vegetables, ham, shrimp, imitation crab ( kanikama), and marinated  fish.     You can mix and match the toppings according to the season.     Leaf-shaped carrot and  baked egg  is great topping for the fall.  Flower shaped  ham  is a perfect match for the spring .  Chirashi Sushi is a fun menu for any occasion.

Rolled Sushi Cookig (Canned Tuna and Salmon)

 Rolled Sushi is great  for appetizers or finger food at any parties or potlucks.   Rolled Sushi rice is wrapped with seaweed (Nori) on the outside .
As for my first Rolled Sushi ,  the fillings you need are rolled omelet (tamagoyaki), simmered carrot, blanched spinach, cucumber, lettuce, avocado, and canned tuna.
As for the second  Rolled Sushi, you need  raw(sashimi) salmon  instead of canned tuna.
You can also make Vegetarian Rolled Sushi with just vegetables.
You will enjoy not only the taste but also the colorful presentation after  cut the  Rolled Sushi.  Also, Rolled Sushi is ideal for Bento (box lunches), as the vinegar acts as a preservative.

Japanese dashi mild vegetable curry

This  is a very mild wafu dashi curry  and can be eaten by children to adults. And also you can intake a lot of  vegetables. It is more like a sauce that goes with Japanese steamed rice. Surprisingly, it isn't well known although curry is one of the national dishes in Japan. First, I make dashi soup stock which is made from Konbu and katsuobushi called Wafu dashi. This soup stock (dashi soup) is very convenient. You can use it for miso soup,  and etc. You can use it to make curry and also make any kinds of curry like meat, seafood or what ever you like. You can also adjust the hot flavors too. Daily Low-Carb Cooking (Okonomi-Yaki)

As a quick low-carb meal, I would like to share the recipe of Okonomi-Yaki, which is a Japanese non-sweet cabbage-based pancake cooked on a frying pan. In my recipe we use  a very small amount of flour.  You can add your favorite filling, such as sliced pork, shrimp and cheese -- actually “Okonomi” means “Your Favorite”. Let’s also make Caprese (mozzarella cheese and tomato) as a side dish, which is fresh and cold!

If you apply for my class, I will send you the basic recipe in English and a list of ideas for topping (ingredients) so that you can prepare your own “Okonomi” ingredients! During the workshop, I will show you how we cut the materials, make Okonomi-yaki batter, and cook with a flying pan while chatting.  If you have two frying pans, we can cook for two persons at the same time.  Let’s have fun together!

"Chara-ben", a kind of bento which shapes rice and side dishes into manga and anime characters, is a unique culture of animation advanced country Japan, attracting attentions all over the world.

●Let's make Chara-ben!

In this plan, I gonna introduce you how to make a Kumamon's Chara-ben.
This will be an experience of making a very cute chara-ben decorated with seaweed and cheese easily.

●Do you know "KUMAMON"?

He is a PR mascot character in Kumamoto Prefecture, a Japanese city. One of the most famous characters among many mascots.

●Japanese cuisine

I also introduce Japanese cuisine such as bonito soup stock and Japanese seasonings.
You can also practice using chopsticks!

My lessons are held at my home. You can relax and take lessons as if you were in a homestay.

My house is a 3-minute walk from the nearest station (Tsunashima Station on the Tokyu Toyoko Line).

To Yokohama Station in 10 minutes. To Shibuya Station in 20 minutes. 
The access is so good that you can enjoy sightseeing after the lesson.

Chan-Chan Yaki: Hokkaido's Traditional Salmon Teppan-Yaki with Miso-Butter Sauce (ONLINE)

| What Can I learn?


You will learn scrumptious salmon Teppan-Yaki from Hokkaido, called CHAN-CHAN YAKI. In Hokkaido, the dish is typically prepared on special occasions, such as outdoor BBQ party, family reunion, camping, so if you are looking for a new recipe for such occasions, this lesson would be perfect! Preparation of Chan-Chan Yaki is not difficult, so there's no need to worry about, even if your are a beginner at Japanese cooking. 

| What is Chan-Chan Yaki?


Chan-Chan Yaki is a Teppan-Yaki dish with a huge fillet of salmon cooked along with various  vegetables and MISO-BUTTER sauce.  Salmon has long played such an important role in Hokkaido's culinary history (regarded as a gift from gods among Ainu people) and used for varieties of local dishes. Chan-Chan-Yaki was also officially chosen by the MAFF (the Ministry of Agriculture, Forestry and Fisheries) as one of the most important dishes that represents Hokkaido's culinary culture.  So, that means by enjoying Chan-Chan-Yaki, you are enjoying the culture itself!

1. Chan-Chan Yaki (Fisherman-style salmon BBQ)

2. Simple Salt Onigiri (Rice ball)

What will I need?


-INGREDIENTS- (Serves 2)
400g Salmon fillet
2 Asparaguses
1/4 Cabbage
1/2 Japanese green onion (or 2 regular green onions)
2 Shiitake mushrooms (or button mushrooms)
1/2 Red pepper
1 Boiled potatoes
100g Tinned corn
3 knobs Butter
<Miso Sauce>
4 Tbsp Miso
100ml Sake
1cup Water
1 Tbsp Mirin
1 Tbsp Sugar
1 clove Garlic, grated
<Cheese Dipper>
150g Emmental cheese, shredded
150g Gruyere cheese, shredded
120ml White wine
2 tsp Corn starch
2 Tbsp water
<Rice Balls>
320g Freshly cooked Japanese rice (Nishiki or so)
1 Nori sheet (the black seaweed paper used for sushi. You might find Japanese and Korean ones at a store but make sure to get a Japanese one)
<Cooking ware and utensils>
*1 Electric griddle with a lid(or 1 non-stick pan with a lid and 1 portable stove)
*1 or 2 turners
*1 Fondue pot or any heat-resistant pot that can be used on the griddle as in the photo of the dish
*2 medium-size bowls
*1 cup for making cornstarch slurry
*1 cooking knife
*1 cutting board
*1 large strainer for washing the vegetables
*a set of measuring spoons
*1 peeler
*1 fish bone tweezer (In case the fish hasn't been boned)

Traditional rolled sushi and more!

Welcome to Hayama class!

Let's make rolled sushi lunch with me. Learn basic technique of traditional rolled sushi first, then you can make crazy ones, such as California roll (avocado & imitation crab meat), Philadelphia roll (smoked salmon & cream cheese) or Spicy tuna roll  (fresh tuna with spicy hot sauce).

You will  make the traditional one (egg, imitation crab, dried gourd shavings, carrot & cucumber) and 2 kinds from above.

You will also learn how to make Miso soup and Japanese omelet in heart shape.

Japanese tea and Matcha dessert will be served at the end of class.
