Welcome to this online "traditional Japanese cuisine" cooking class.
In this class, you will learn about Dashi (Japanese soup stock), and a how to use it for your dishes.
You will also learn and how to make  Onigiri(Japanese rice ball) by yourself with some techniques.
Dashi is Japanese unique soup stock, which brings out the flavor of the ingredients. Dashi creates a taste called “umami”, and it’s the core of Japanese food.

Onigir is a famous Japanese food made from white rice formed into triangular or cylindrical shapes and often wrapped in Nori seaweed. The name "onigiri" comes from the verb "nigiru" which means "to press and shape with hands." Onigiri can be the essential food of the picnics, a satisfying little snack for Children, lunch for workers etc....

Online local B-class gourmet cooking ”Kei-chan"

 

 

 

Welcome to this online cooking class. This classroom will teach you how to make B-class gourmet foods from all over Japan. This time, it is a B-class gourmet of Hida region in Gifu prefecture , which are popular spots in Japan.

The dish is "Kei-chan".

"Kei" means chicken in Japanese. "Chan" is a nickname in Japanese.

According to one theory, the Chinese character "Jan", which stands for soy sauce, has changed.

The reason is that by soaking chicken in an ancient Japanese fermented seasoning, it has the effect of softening the taste as well as stain it.

It is a dish in which chicken is soaked in seasoning for about 3 hours and stir fry with vegetables.

Since around 1960, local butcher shops and taverns have improved independently, and it has become one of the town revitalization as a local B-class gourmet.

In addition to Kei-chan, we also make rice cooked with mushrooms.

 

 

 

It is a simple dish that you cook with the ingredients and seasoning together.

We also make simple pickles of cucumber.

Champon Noodles (Nagasaki Ramen)

Thank you for visiting! This class is for people who are interested in local cuisine as well as typical Japanese dishes.    As I live in Nagasaki, I’d like to share Nagasaki's local cooking experience with you.

 

Nagasaki is located at the western tip of Japan. A lot of tourists from all over the world visit Nagasaki and enjoy its historic places, beautiful nature, onsen( hot springs), and local dishes. Surrounded by a bountiful natural environment, it is overflowing with delicious food from both the land and the sea. In its history, Nagasaki was the only open window to the world during “Sakoku”, the period of Japan’s national isolation. Nagasaki acted as a bridge between Japan and other countries. Out of the exchange between different cultures, a unique culture, which was called “Champon Culture”, was born. “Champon” means “mixing various things” and it is reflected in the traditional Nagasaki style of cuisine, too.

 

Champon noodle is one of the most popular regional dishes of Nagasaki and is well known all over Japan. It’s a kind of noodle soup simmered with various ingredients such as pork, seafood, and vegetables. It's similar to Ramen, but Champon is healthier because there are a lot of nutritious ingredients in it. The tip on making it so delicious is its soup. Originally, the soup is made from pork bones, simmered for a long time. In this class, however, I’ll show and tell you how to make it much more quickly and easily.

Soybean Paste-Flavored Noodles "Miso-Nikomi-Udon"

"Miso-Nikomi-Udon" is one of the typical noodle dishes in Aichi. This dish is made by boiling Udon noodles in Miso-style soup and topped with chicken, leek, and Kamaboko. This miso-made soup has a different taste from "Misoshiru", and it becomes very tasty just by adding "a secret seasoning". Hot Miso-Nikomi-Udon simmered in a clay pot for one person is so delicious not only in the cold winter but also in the hot summer! In this class,  you start by taking the soup stock from scratch. And what is "a secret seasoning"? I'll teach you how to make miso-style soup with rich flavor.

Online local B-class gourmet cooking ”Gohei Mochi"

Welcome to this online cooking class. This classroom will teach you how to make B-class gourmet foods from all over Japan. This time, it is a B-class gourmet of Hida Takayama and Shirakawa-go, which are popular spots in Japan.

It is a dish using rice. Make two kinds of sauces and enjoy each taste. In addition, we will prepare egg soup using a simple bonito-based soup stock.

Learn about the ingredients, share cooking tips, and step by step how to make everything with local cookware. It only takes about 40 minutes to prepare a dish. I want you to learn recipes that are easy to make with seasonings used at home. When you're done, eat the food you cooked together.

Musashino pork soup Udon

Japanese udon is wheat pasta made in thick strips. It is white in color. Musashino area of ​​Tokyo has long been famous for various soba and udon noodles. Among them, Musashino pork soup udon is a menu unique to this area. People usually eat udon in pork broth. In this class, we knead the flour and make udon noodle. At this time, you step on the dough with your feet and knead it. This method has been handed down from ancient time in Japan. The pork broth is made from dashi stock. You are welcome to participate with your children.

200g Udon flour (medium-strength flour = all-purpose flour) If not available, 100g weak flour (plain flour) and 100g strong flour (bread flour),  10g salt, 120ml water, about 30g of cornstarch (or medium-strength flour ) for dusting the dough, 5cm konbu (kelp), 10g katsuobushi flakes (bonito flakes) if you don't have kelp and dried bonito, use 2g of dashi powder, 2tbs soy sauce, 2tbs mirin (or 1 tbs sugar if not available), 200g thin slice of pork belly, 1/2 green onion (or 1/2 onion if not available)

Shrimp Tempura Riceball "Tenmusu "and "Misoshiru"

Tenmusu is a rice ball with deep fried shrimp tempura inside and wrapped Nori.
There are various rice balls all over Japan, but Tenmusu is a little smaller so it's easy to eat. Recommended for breakfast, lunch, and midnight snacks so on!
 
And in this class, we will make Misoshiru(Miso-soup) as the first step of miso activity!
If you have a Japanese Grocery Store or an Asian supermarket in your neighborhood, look for Akadashi Miso. If not, any kind of miso is fine.

Zoom - Beef Bowl Donburi Class

Let's cook together!
This is a very simple,  quick and easy but yummy Japanese dish.  I will guide you on how to cook and teach you some tips. Also, we will make some pickles at the same time. This pickles give you sourness and make it a good balance for this dish.
Beef Bowl consists of a bowl of steamed rice topped with thinly sliced beef and tender onion, simmered in a sweet and savoury dashi broth seasoned with soy sauce and mirin.
