Online local B-class gourmet cooking ”Kei-chan"

      Welcome to this online cooking class. This classroom will teach you how to make B-class gourmet foods from all over Japan. This time, it is a B-class gourmet of Hida region in Gifu prefecture , which are popular spots in Japan.         (photo of Gero Hot spring)     The dish is "Kei-chan". "Kei" means chicken in Japanese. "Chan" is a nickname in Japanese. According to one theory, the Chinese character "Jan", which stands for soy sauce, has changed. The reason is that by soaking chicken in an ancient Japanese fermented seasoning, it has the effect of softening the taste as well as stain it. It is a dish in which chicken is soaked in seasoning for about 3 hours and stir fry with vegetables. Since around 1960, local butcher shops and taverns have improved independently, and it has become one of the town revitalization as a local B-class gourmet. In addition to Kei-chan, we also make rice cooked with mushrooms.       It is a simple dish that you cook with the ingredients and seasoning together. We also make simple pickles of cucumber.       It looks delicious! Would you like to cook together?   2. Make dishes using various tools and ingredients. 
    Included: Included: 1.5 hours online class B gourmet (Kei-chan and 2 other dishes) Cooking class recipe (provided before class)     Exclusion: Materials for making your own tableware and cooking utensils. Meeting place and meeting time: This cooking class is held online. We will send you a class zoom in advance. Prepare the following materials for this class:     Ingredients: chicken thigh, chicken breast, cabbage, bean sprouts, carrot(above Kei-chan).Rice, mushrooms, carrots, tuna (above rice cooked ).Cucumber (above pickled cucumber).      seasoning: miso, soy sauce, sesame oil, cooking liquor, sugar, garlic (Chopped),Granule soup stock (chicken consomme is also acceptable).

My name is Megumi Tanaka.Enjoy cooking, eating and experiencing local B-class gourmet foods from all over Japan!Why don't you join us for such an experience? Class B gourmet is a local food that is unique in each region and is a soul food that is loved and eaten by locals.Why don't you travel to various parts of Japan with B-grade gourmet? This lesson is for foreigners who are visiting and/or living in Japan who can reproduce local B-class gourmet at home. You can also participate online. 【Profile】 Born in Ishikawa Prefecture in 1963, lives in Aichi Prefecture, Kanazawa Cookery College, and after obtaining a cook license, got a job at the general hospital nutrition section and engaged in hospital lunch. I want to break my shell! With that youthfulness, I went on a journey to find myself. Worked at a restaurant as an instructor and taught skiing for 10 years. After that, I engaged in customer service cooking and management for 8 years at a company that operates fast food and cafes. In 2000, two-thirds of her stomach was resected on suspicion of gastric cancer. After that, she encountered wine in her diet and became interested in wine knowledge and language (English). Also took the 2006 sommelier exam. During that time, she worked for a hotel serving buffet food for 6 years and served as the chef. Moved to Aichi prefecture after getting married in 2010. Engaged in cooking nursing care food at medical facilities for 10 years. In 2019, breast cancer was discovered and undergoing therapeutic surgery. Obtained the qualification of Wassho Cook certified instructor during the treatment period. In 2020 Cooking class for foreigners (Washo Cook) Aichi Toyoake branch was opened and started as a cooking class to introduce local B-class gourmet to foreigners in English. Taking advantage of cooking experience in the restaurant industry and accommodation industry, we arrange and convey local B-class gourmet foods from all over Japan so that they can be easily reproduced at home.
