{"id":365,"name":"Koki Yokoyama","url":"","description":"I have built my career as an instructor at a nutrition college and as the head chef of a health-focused restaurant, where I learned a wide range of techniques from culinary basics to advanced applications. I have also been involved in product development and staff training. Through these experiences, I discovered that bringing richness to people\u2019s minds and bodies through food is my greatest joy. One of the most memorable experiences in my career was teaching Japanese cuisine to local students during an overseas training program, as well as working closely with Vietnamese staff members to support their growth. These moments taught me the beauty of connecting with people through food\u2014beyond differences in culture and language. I also took part in a nationwide project themed \u201cExperiencing Japan Through Food,\u201d where I reimagined regional Japanese dishes in a modern style. This project led to an award in a culinary competition. The experience of carrying local flavors into the future in a new and creative way became the foundation of my passion: to share traditional Japanese cuisine with the world. Going forward, I hope to make use of the knowledge and experience I have gained to open a cooking school for international learners. My goal is to introduce the charm of Japanese home cooking and regional dishes in English, and to share Japan\u2019s healthy and delicious food culture with people around the world.
