About Class

  • You can experience the unique local food culture of Hyogo by cooking with regional specialties and traditional dishes.
  • The lessons are based on my experience as an instructor at a nutrition school and as the head chef of a health-focused restaurant, ensuring reliable and professional guidance.
  • We incorporate Japan’s fermentation culture—such as miso, shoyu-koji, and shio-koji—to create dishes that are gut-friendly and nutritious.
  • This is a hands-on class where you can cook and enjoy authentic Japanese home-style and regional dishes that you rarely experience outside Japan.
  • You will learn not only cooking techniques but also how to choose ingredients, understand nutritional balance, and appreciate the history and culture behind each dish.
  • The class aims to create a warm, welcoming environment where people from different cultures can cook together, connect, and share smiles.

— Nourishing Your Body and Mind with Ancient Japanese Wisdom & the Power of Fermentation —

Have you recently felt changes in your body or a sense of fatigue?
Perhaps your eating rhythm has become irregular, you don’t feel as energetic as before, or Japanese food doesn’t feel like it fits your body anymore.
This class is designed to gently support those feelings by bringing Japan’s traditional “wisdom of the regions” to your table.

Across Japan, local dishes carry the knowledge of people who have lived in harmony with nature for centuries.
Methods of fermentation and preservation, techniques to make the most of seasonal ingredients—
all of these are time-tested ways to restore the body and soothe the mind.

In this class, we select one region of Japan each month and recreate its traditional dishes in a modern, easy-to-cook style.
Using the Ichiju-Sansai (one soup, three dishes) set-meal format, we balance nutrition, flavor, and beautiful presentation.

Learning to cook is also a way to recenter yourself.
Amid the busyness of daily life, take a moment to reset your body and mind,
and let’s create a warm, healing dining experience—for yourself, and for the people you care about.
