Healing Herbal Cuisine (=Slow-Yakuzen) " is an easygoing approach to traditional medicinal cooking that helps balance the body using familiar, everyday ingredients without being too strict. Slow Yakuzen also uses dashi, the basic ingredient of Japanese cuisine. Dashi, made from bonito, kelp, shiitake mushrooms, dried sardines, etc., not only adds a deep flavor to dishes, but is also rich in nutrients and important in supporting a healthy diet. We emphasize the importance of enjoying food and naturally regulating one's health.

You will learn five Japanese dishes that use dashi to "power up" in accordance with the concept of Japanese medicinal herbs. The lecture will start with the valuable experience of shaving bonito flakes, the key ingredient of dashi, and how to make authentic dashi. Why not learn while relaxing in the Ryokan's lounge, which is located next to Amazake Yokocho in Nihonbashi Ningyocho and boasts a historic Japanese house and elegant atmosphere that is very popular with guests from all over the world?
