In this class, you are going to make a colorful plate lunch with easy decorated sushi (Oshi sushi-Pressd sushi), Dashi maki tamago (rolled Japanese-style omelet), and Tori tsukune (Japanese chicken meatballs). It is easy and perfect recipe for a casual home party. I have also vegetarian and vegan menu. Then you can relax with authentic green tea (Matcha) with Japanese sweets after having this menu together. I will perform a simple Japanese tea ceremony.
I live in suburban Tokyo area, where the Ghibli Anime "My Neighbor Totoro" was set. After this cooking experience, If you prefer, you can walk in the Hachikokuyama forest park, so-called Totoro related forest.(approximately 30 min)

Japanese fried chicken (KARA-AGE) & Rice ball (ONIGIRI)

The Japanese version of fried chicken is known as “KARA-AGE”. It is popular as a lunch box (bento box) menu, as well as an izakaya (tavern) menu. Chicken meat is marinated with typical Japanese seasonings, and then deep-fried. Onigiri (rice ball) is typical bento box item. You can purchase them at convenient stores in Japan, but hand-shaped freshly homemade onigiri is always nice and delicious. You can make a triangular shaped onigiri easily! And you can also learn how to make Japanese basic Dashi stock. What is Dashi stock?  It is savory broth made from Japanese foods, such as dried kombu kelp, and dried bonito. They are all rich in “umami” flavor. In this class we use Dashi stock to make miso soup. Miso soup is one of the national foods in Japan. Highlights:
  1. We cook KARA-AGE (Japanese-style soy sauce flavored fried chicken). The following cooking method provides you with crispy surface and juicy inside fried chicken.
  2. When making rice ball, we grasp cooked rice in our own bare hands to make it triangular shape. We will do this together, because grasping rice ball needs some knack.
  3.  Dashi stock is essential to washoku cooking. Your dishes will become wonderfully delicious and if you keep the stock ready, it’s very convenient for cooking.

Please prepare the following ingredients for this class:(1 person):  200g Boneless chicken thigh (or boneless chicken breast), ginger, garlic, cooking sake, soy sauce, flour, katakuriko (Japanese potato starch) or cornstarch, vegetable oil for deep-frying, vegetable for side dish (your favorite vegetable), 1 cup cooked rice (short grain rice), canned tuna, 1 sheet toasted nori (Japanese dried seaweed), onion, mayonnaise, 8cm dried kombu (kelp), 10g katsuobushi (dried-bonito flakes),  potato, 1 tbs. miso. (If not available, I recommend other ingredients. Please contact me for advice.)

Musashino pork soup Udon

Japanese udon is wheat pasta made in thick strips. It is white in color. Musashino area of ​​Tokyo has long been famous for various soba and udon noodles. Among them, Musashino pork soup udon is a menu unique to this area. People usually eat udon in pork broth. In this class, we knead the flour and make udon noodle. At this time, you step on the dough with your feet and knead it. This method has been handed down from ancient time in Japan. The pork broth is made from dashi stock. You are welcome to participate with your children. <highlight>

Hokkaido-style vegan "Soup Curry"

"Soup Curry" is a popular dish from Hokkaido Japan.  It is a type of curry soup with pork or chicken broth and big chunks of vegetable and chicken, but this menu is for vegetarians and vegans. So we are going to make "Soup Curry" without chicken.  We use some vegetables and spices. It's a very delicious curry even though it doesn't use chicken. You can eat "Soup Curry" with your favorite rice or bread. You will be surprised how delicious it is!

Easy! Onigirazu (Rice Sandwich)

Have you ever heard of Onigiri, Japanese rice balls?
When we make Onigiri (rice ball) we put the ingredients in the rice, mold it in our hands and wrap the seaweed. It is hard for some people to make a triangular ball.
Recently, a new version of Onigiri is getting popular. It is called Onigirazu, or rice sandwiches.
"Onigirazu" is a kind of rice ball, but it is called "Onigirazu" because it is not made into balls. "Onigirazu" is a coined word made by putting Onigiri and Nigirazu (not hand -molded) together.
It started in 1990 when it was introduced in a Japanese anime called "Cooking Papa".  It's very easy to make. While Onigiri is mainly rice,  "Onigirazu" has less rice and you can add a lot of ingredients.  You will be surprised to see how colorful it is when it's cut in half.

Hi! Welcome to my online cooking experience! I’m Izumi. Once I lived in Virginia, USA for two years when my kids were small. The elementary school where my son went had so many international students from over 70 countries, and I cooked Japanese foods in the school festival. The memories I had there through exchanging cultures and cooking were amazing!  Now I live in suburban Tokyo area. I have a qualification for the Japan association of cooking for foreign peoples, and teach them Japanese cuisine. I maintain my cooking class where I teach Japanese Oshi-sushi cooking classes and vegan & vegetarian meal with Japanese ingredients classes on face to face basis in my kitchen. My class members enjoyed so much. Now I’m offering my cooking class online, and I hope more guests to enjoy attractive Japanese culture and cuisine (Washoku) through this online cooking experience.
