    Okonomiyaki is a savory Japanese-style pancake made from cabbage, egg, flour and water with lots of toppings.
    You can put sliced pork, seafood and whatever you like on it.
    In this online class we can enjoy making Okonomiyaki together. Okonomiyaki is very popular in Osaka.
    I live in Osaka so I make and eat Okonomiyaki frequently.
    I will tell you the magical way to making delicious Okonomiyaki in this class.

100g flour,  100cc water,  1/4 head of cabbage, 10g dashi powder , green onion,2eggs, Thin slice pork meat (or bacon), About 50g Seafood mix , About 50g Chinese yam(or potato), aonori sea weed(If you have), bonito flake(If you have),  Red pickled ginger (or chopped ginger) 1 table spoon,  Mayonnaise, ※Okonomiyaki-sauce, ※Tenkasu
※Okonomiyaki-sauce →If you don't have you can make it from BBQ sauce(or Worcestershire sauce), ketchup, soy sauce and oyster sauce ( I will send a recipe after you book this lesson)
※Tenkasu→If you don't have you can make it from flour, water, vegetable oil  and vinegar( I will send a recipe after you book and make it together in this lesson)

Salad Sushi Rolls class

Why don't you make a colorful and beautiful salad roll with plenty of vegetables used for salad?

The sushi rolls I introduce are not traditional Japanese "Maki sushi " but healthy "Salad Maki sushi" that you can eat like a salad. Salad sushi is not typical Japanese sushi rolls, but it is one of the most popular sushi in world in recent years.
In this classroom, we will make sushi rolls by incorporating your favorite vegetables for salads that are familiar to you!

Japanese fried chicken (KARA-AGE) & Rice ball (ONIGIRI)

  1. KARA-AGE (Japanese fried chicken)
  2. Onigiri (Tuna mixed with mayonnaise rice ball)
  3. Miso soup (potato and onion)

The Japanese version of fried chicken is known as “KARA-AGE”. It is popular as a lunch box (bento box) menu, as well as an izakaya (tavern) menu. Chicken meat is marinated with typical Japanese seasonings, and then deep-fried.

Onigiri (rice ball) is typical bento box item. You can purchase them at convenient stores in Japan, but hand-shaped freshly homemade onigiri is always nice and delicious. You can make a triangular shaped onigiri easily!

And you can also learn how to make Japanese basic Dashi stock. What is Dashi stock?  It is savory broth made from Japanese foods, such as dried kombu kelp, and dried bonito. They are all rich in “umami” flavor. In this class we use Dashi stock to make miso soup. Miso soup is one of the national foods in Japan.

Highlights:

  1. We cook KARA-AGE (Japanese-style soy sauce flavored fried chicken). The following cooking method provides you with crispy surface and juicy inside fried chicken.
  2. When making rice ball, we grasp cooked rice in our own bare hands to make it triangular shape. We will do this together, because grasping rice ball needs some knack.
  3.  Dashi stock is essential to washoku cooking. Your dishes will become wonderfully delicious and if you keep the stock ready, it’s very convenient for cooking.
  4. Following the detailed demonstration by your friendly online instructor, you can create Japanese popular cuisine.

Please prepare the following ingredients for this class:(1 person):  200g Boneless chicken thigh (or boneless chicken breast), ginger, garlic, cooking sake, soy sauce, flour, katakuriko (Japanese potato starch) or cornstarch, vegetable oil for deep-frying, vegetable for side dish (your favorite vegetable), 1 cup cooked rice (short grain rice), canned tuna, 1 sheet toasted nori (Japanese dried seaweed), onion, mayonnaise, 8cm dried kombu (kelp), 10g katsuobushi (dried-bonito flakes),  potato, 1 tbs. miso. (If not available, I recommend other ingredients. Please contact me for advice.)

Through my cooking class,  you can learn the knowledge of basic Japanese food as well as Japanese food education.

What is unique about my class is that it uses an original Manga “Kamishibai” the form of storytelling with pictures.

For the first couple of minutes, we will see this “Kamishibai”, so you can learn the basic Japanese cooking, manner and gratitude for food.

And afterwards, we will cook together!

Every generation is welcome, from kids to the elderly!

Online Traditional Japanese Cuisine with a chef

Welcome to this online cooking class.
I’ll teach you how to make washoku—traditional Japanese cuisine—and together we'll cook four delicious, easy-to-make dishes. First, we’ll prepare dashi, a simple seaweed-based stock that is the cornerstone of our country's cooking. Using seasonal ingredients and dashi stock, we’ll make a home-style entrée, side, soup, and dessert.

I’ll explain the ingredients, share cooking tips, and provide step-by-step instruction on how to make everything with local cooking tools. Each dish only takes about 20 minutes to create. There are plenty of complicated and time-consuming Japanese recipes, but I want you to learn ones that you'll use back home. When we’re finished, we’ll eat the food we prepared together.

Colorful Gomoku-chirashi-sushi

This is a class that introduces colorful sushi dishes.

Gomoku-chirashi-sushi is a traditional Japanese home-style dish, consisting of vinegared rice mixed with vegetables and mushrooms and topped with colorful vegetables, beans, boiled shrimp and other ingredients.

This sushi is often eaten at festivals and celebrations, so why not make this delicious and beautiful sushi for your family and friends to celebrate?
You will be sure to please them.

I'll teach you how to make this dish in detail, so don't worry if you're not a good cook.

Low-Carb Japanese Stuffed Pancake Okonomi-Yaki

As a quick low-carb meal, I would like to share the recipe of Okonomi-Yaki, which is a Japanese non-sweet cabbage-based pancake cooked on a frying pan. In my recipe we use  a very small amount of flour.  You can add your favorite filling, such as sliced pork, shrimp and cheese -- actually “Okonomi” means “Your Favorite”.

Fried Chicken Donburi with Kakitama-jiru(thick egg-drop soup)

 

Welcome to this online  Chicken  Donburi making experience, an activity that is easy and uses accessible and reasonable ingredients via an online video chatting platform.

Donburi is a popular dish as a lunchtime menu in Japan, and it is a perfect nutritious  menu for easy to cook and it can be completed with just a single bowl.   In this lesson, I use chicken breast rather than chicken thigh which is healthy with almost  no fat. I will teach you  useful cooking tips for how to make chicken breast  soft and juicy. 

And also I will make dericious Kakitama-jiru using Dashi stock and egg. The soft textured egg goes great with thick Dashi stock.

☆For Chicken Donburi

-Approximately 150g -200g Chicken breast, -1 egg,   -1/2 Tbsp potato starch, -1 Tbsps flour , -1/2Tbsp sugar,  -1Tbsps Sake,  -1 Tbsp Mirin,  1.5 Tbsps Soya sauce,  -Vegetable oil(for fry),
- Lettuce or Cabbage,  -White radish sprouts or broccoli sprouts,  -Trefoil,  -cooked rice   -Mayonnaise,-Wasabi(as you like)
If you don’t have Mirin, it can be replaced with Sake and Sugar instead (^_-) (1Tbsp Mirin=1tsp sugar+1Tsp Sake)

☆For Kakitama-jiru

-1 Egg,  -1 tsp Dashi stock,  -1/2 tsp  Soy sauce,  -one pinch  salt,

-1 tsp Potato starch,  trefoil
